Combating Disease Transmission: Educators Edition

This hands-on course provides a foundational understanding of infectious diseases, how disease transmission is reduced and prevented in healthcare and resources available to educators. Hands on activities, including donning and doffing PPE and effective hand hygiene and disinfectant use will be demonstrated to give educators basic knowledge of these critical processes and how to implement these activities in their classrooms.

Learning Objectives:
1. Understand where germs live, how they are transmitted to cause infection, and what strategies we can use to prevent infection.
2. Identify resources available to help support effective IPC education in Healthcare CTE Classrooms.
3. Review and practice proper PPE donning and doffing processes, effective hand hygiene and disinfectant use.

Youth Advocacy in Public Health - A Curriculum

In the 2023-2024 school year the Youth Health Equity Project was created and implemented by NE Extension and NE FCCLA with funding from the NE Office of Health Disparities. The goal of the project was for youth to investigate local health issues such as mental health, food insecurity, traffic safety, and vaping. A curriculum is being developed with lessons on conducting community needs assessments, working in youth adult partnerships and sharing research findings. Activities encourage youth to practice advocacy and engage in public health skills through project-based learning. Join us to learn about this resource and how to participate in the curriculum pilot testing.

Consumer trends have grown the need for up-to-date research-based food preservation information. Everyone is looking for ways to learn how to safely keep fresh fruits, vegetables, and herbs from their gardens or for their purchases at the local farmers market. The Nebraska Extension Food Safety team has updated webpage information, developed electronic food preservation newsletters, and developed lesson plans to meet these needs. Session participants will learn the importance of identifying correct home preservation methods; become introduced to lesson plans to teach preserving grape jelly (easiest), canning tomatoes (easy), and pressure canning carrots (a bit harder). Participants will learn where to find hands-on activities to use with secondary students and where to find free research-based recipes.
